Monica’s Payday Cake Recipe

Long time, no post! I’ve been busy dabbling in new hobbies and adventures. Last month I went with a friend who is starting an online business to an ecommerce conference, and it opened my eyes to a whole new world of online possibilities beyond blogging!


Conferences are great because of the people you get to meet, and one of the notable people I got to know at the conference was Monica Eaton-Cardone, the CIO of Global Risk Technologies. Global Risk Technologies started in Clearwater, Florida but has since moved its international headquarters to Dublin. Global Risk Technologies specialize in managing and mitigating chargeback fraud.

At first I didn’t know what chargebacks were, but her thorough explanation taught me about something new! Basically, chargebacks are credit card refunds that are issued to credit card holders if someone else uses their card without permission. Unfortuantely, some people take advantage of this system, however, and go shopping with the intention of claiming fraud and reversing the charges.

This is bad news for business owners, which is why I am glad that my friend and I met Monica! We exchanged contact info and now my ecommerce-newbie friend has a great mentor.

During our conversation, we also found out that when this business tycoon isn’t busy with work, she is an excellent chef. I told her about my blog and she offered to share one of her favorite recipes with me so I can share it with you all here!


I think it is absolutely hilarious (and quite fitting) that Monica Eaton-Cardone’s favorite recipe is kind of, sort of, with a stretch of imagination, related to chargebacks. How many friendly fraudsters file chargebacks because their payday doesn’t come soon enough?!

Alright. Without further ado, the best Payday Cake recipe!


Mix the following ingredients:

  • 1 box yellow cake mix
  • 1/3 cup margarine (softened)
  • 1 egg

Add mixture to an ungreased, 9×13 inch pan. Bake at 350 degrees for approximately 15 minutes or until the surface is golden and an inserted knife comes out clean.

Immediately after removing the cake from the oven, add 3 cups mini marshmallows.

Set the cake aside and mix the following ingredients in a sauce pan over medium heat on the stove:

  • 2/3 cup light corn syrup
  • 1/4 cup margarine
  • 12 ounces peanut butter chips
  • 2 teaspoons vanilla

Stir the contents continuously until the chips have melted and everything is blended.

Pour liquid mixture over the marshmallow-covered cake.

Sprinkle 2 cups Rice Krispies over the cake.

Sprinkle 2 cups salted peanuts.
